I think it's the wrong kind of mentality to seperate graphics from the overall game. A game can't be looked at as singular enteties. A game is a sum of its parts, story game, it all adds to an overall experience. To much is emphasised in individual aspects aof a game. Games like Defcon and Uplink should in all repsectsa get a full 10/10 for graphics becuase there graphics are in effect part of the game and become part of the interface that creates the feel of what it is your experienceing. There are no polygons, in fact Uplink is for all intents and purpsoes a textbased adventure and yet against a game like Crysis it works. Crysis ont he other hand with it's ground breaking technology cutting edge 3D that even when run on bleeding edge technology just add's to the overall feeling of a game that lacks something. Sure the graphics look great but the game is nothing if not sub par.
Graphics are important to me, but not in the terminology so often touted by today's "Gamer". Graphics should be part of the game the way the UI is part of the game. Graphics should be treated like an interface between the gamer and the game itself. A form of control scheme. You can put the cockpit of a boeing 747 in a spitfire, but it's likely to make your flight expereince a little undeasy.
